Ingredients Steak & Seasoning 800 g sirloin steak 2 tbsp olive oil 1/2 tsp ground coriander 1/2 tsp cumin 1/4 tsp cayenne pepper Chimichurri Sauce 1 garlic clove finely chopped 1 bunch fresh coriander chopped 1 bunch fresh parsley chopped 3 tbsp white wine vinegar 70 ml extra virgin olive oil Method Make the chimichurri sauce by combining all ingredients in a bowl, let the flavours infuse while you prepare the steak. Pat the steaks dry with kitchen paper. In a small bowl mix together the ground coriander, cumin, cayenne pepper and olive oil. Rub the mixture over both sides of the steak. Heat a cast iron griddle until smoking. Cook the steaks for about 3 minutes each side for rare (check out our Youtube video for a guide to cooking the perfect steak). Remove the steak from the pan and let rest for a few minutes, slice diagonally and serve with the chimichurri sauce. Ingredients 4 free range chicken breasts 1 yellow pepper 1 red pepper 1 onion, diced lengthways 1 tomato 50g curly kale chilli powder 8 fajita wraps Instructions Dice the chicken into small, evenly sized chunks. Chop the peppers into long, thin strips before cutting the tomato into small cubes. Finally, chop the onion into long, thin strips (roughly the same length as the pepper). In a large frying pan, heat the olive oil and add the chicken Fry until browned before adding the peppers and onion. Wrap the fajitas in foil and cook for 10 minutes in the oven. Season with chilli powder and continue until the chicken is cooked thoroughly and the vegetables have softened. Garnish with curly kale and tomatoes. Serve immediately.
